Costa Rican Food

I have come to the realization that I will be dropping some pounds over the next few months……and I will attribute this to the food in Costa Rica. The food is not bad…..nor is it memorable. I have now had 6 meals…..one of those being Easter dinner…..and each meal has consisted of the following items:
1. Rice
2. Beans
3. Tomatoes
4. Cucumbers
5. Lettuce
6. Tortillas
7. Fish/Chicken
8. Fresh Juice
9…..Did I mention Beans and Rice???

I have placed each item strategically in order to indicate which items are more prevalent. Approx. 80% of each meal so far has been the bean/rice combo. Again…there is nothing wrong with any of these items…and they have been prepared wonderfully. However…I know that as the months progress….eating is going to become a simple act…..and no longer an act of enjoyment. What have taken me by surprise are the juices. I have had fresh Pina, Mango, Coconut, Apple, Orange, Star Fruit, and a few combos of the aforementioned fruits….and they are out of this world.


FYI…..on March 22, 2008…I weighed 187LBS. I will keep you posted on my progress/decline.
