Curried Carrot Soup

CURRIED CARROT SOUP

1 onion (chopped)
1clove garlic (minced)
2 stalks celery (chopped; optional)
In large soup pot saute in 2 T. olive oil until soft

2 lb carrots or sweet potatoes
6 c. vegetable broth
2 t. curry powder
Add and bring to a boil. Simmer until carrots are tender, about 20 min. Remove from heat, cool slightly and puree.
